Dr. Fuster is a food policy and public health nutrition scholar. At Brooklyn College, she teaches community nutrition and food culture courses.

Dr. Fuster is the recipient of a prestigious National Institutes of Health Research Career Development Award (K01) to support her research. The project uses approaches from Systems Science, Design Thinking, and Implementation Sciences to engage restaurants in healthy eating promotion efforts. The study builds on previous ethnographic/archival research examining eating practices and health outcomes in NYC Latin Caribbean communities, the basis of her first book manuscript (in contract, University of North Carolina Press). She has also done research in food security and food policy implementation.
